Apple Butter Tower
In partnership with Tessa Sharr (@madebytessalin).
Inspired my @foodmymuse's radish butter tower, this apple-forward version is layered with Kerrygold Cinnamon Sugar butter, creamy unsalted butter, bright lemon zest, flakey sea salt, and fall-spiced candied pecans. Finished with crisp apple slices and served with fresh bakery bread, this show-stopping tower is the perfect centerpiece for cozy fall gatherings.

Ingredients
- 1 SweeTango® apple
- 2 sticks Kerrygold Cinnamon & Sugar Butter, room temperature
- 2 sticks Kerrygold unsalted butter, room temperature
- 2 Tbsp heavy cream, divided
- 2 cups pecans, chopped
- 6 Tbsp light brown sugar
- 1 ½  tsp ground cinnamon
- ½ tsp salt
- ½ tsp vanilla extract
- 1 ½ Tbsp water
- 1 lemon, zested
- 2 Tbsp flaky sea salt
- 1 loaf of bakery bread, for serving
Directions
-
In two separate bowls, whip the cinnamon and sugar butter with 1 tablespoon heavy cream and the unsalted butter with 1 tablespoon heavy cream until each is light and fluffy.
-
Candy the pecans: in a medium saucepan, combine brown sugar, cinnamon, salt, vanilla, and water. Warm over medium heat for 2 minutes until bubbly and smooth. Remove from heat, add the chopped pecans, and stir until they are fully coated. Spread on a sheet pan and let cool.
-
On a serving plate, spread a layer of cinnamon and sugar butter and sprinkle with flaky salt.
-
Add a layer of unsalted butter, followed by candied pecans and lemon zest.Â
-
Repeat the layers until you've used all the butter.Â
-
Thinly slice the apple into triangles: cut the whole apple into quarters, then slice on a mandolin.
-
Tuck apple slices into the butter tower, covering the sides and top.
-
Serve immediately with slices of fresh bakery bread!
